Hooray! My NME Props arena jetpack came in today! :D
Can't wait to get started on this this weekend :)

I'm kind of lost on how to mount it to my back :P The only real help I've found is Taglar's harness tutorial but there aren't any in use pictures. Any helpful pictures or advise is much appreciated :)

There are quite a few different methods of securing your JP to the armor. I am a big fan of magnets personally. I had an Arena JP from RS Props...all fiberglass and resin. Used 8 magnets to secure it to my clone trooper armor. Worked like a charm.
What kind of back plate do you have?
One thing you could do would be to glue strips of nylon webbing to the inside of your backplate. Then cut slots in your backplate (unless they already have harness slots). Then have a few inches of the webbing stick out from the slots. Then you can put some plastic clips on to the ends of the webbing. Then secure a couple inches of webbing to your JP and put the other part of the clip on the webbing.
Something like this....
