I am planning on using a cape in lieu of a back plate, and was wondering if there a preferred style of Cape. (like should it cover my shoulders too or sit behind them)  Also is there a prefered material?

Really depends on the style of cape.  My cape sits on my shoulders and my shoulder bells are more on my forearm biceps, so only the edge of my cape is near the bells.  My wife's cape comes in front and covers most of her collar plate, same for my friend's fur cape.  Examples below:

How you wear a cape is your business.

It should cover 2/3 of the width (shoulder to shoulder) and 2/3 of the height (neck to belt) to give the impression that you have a back covering.  Other than that, come up with a cape that fits your character's style.
