I painted my kit with gunmetal grey and red paint and it doesn't quite have that painted metal look to it. Should I use a clear coat to make is seem less like plastic or is there a better way?

Depends on what look you are going for?  Are you trying to make it look shiny like Din's season 2 beskar armor? or are you just trying to get the metal look with some weathering added to look less plastic?

Mostly just going for a more metal look with some weathering. I like the gunmetal grey but I don't want it quite as shiny as din's armor.

Looks like metal to me right now from your picture.  Add some weathering to see if that helps.
