So, I'm making my vest out of duck cloth but that means theres no stretch, so if i make it fitting to me, i wont be able to get it over my shoulders. Any ideas on how best to make this?

Zippers, straps, velcro…

Mine has a full-length zip in the back.

^ This. You’re going to need the vest to have closures, be they zippers, straps, Velcro, etc. The closure can be in the back, front, or sides. My vest is a front closing vest with a zipper. Straps and buckles are great for side closures. I personally don’t like back closures.
