I'm going to 3D print my armor and use EVA foam behind it to make it more comfortable to wear it. What would the ideal thickness be for that?

Between the flight suit and the vest you really won't feel that plates at all. Additionally, the EVA may cause the plates to not sit right and will eventually need to be replaced anyway.
