Hi, I'd like to make a non-human with Neo-Crusader armor. What are the parameters for this?
Legends lore says that many species were in the Mandalorian army at that era. There's a comics illo of a Wookie with a modified Neo-Crusader kit.

Specifically, a Lepi will need a modified helmet with holes for his two green rabbit ears.

Are there other eras when alien species served as Mandalorians?

Short answer is all era's with the exceprion of the early mando's when they were all Taung. Now if your looking for a visual representations, that is going to be a bit more difficult outside of the KoToR comics. There just isn't any besides fan art. But the CRL's do allow non humans in all era's.
