this is my soft parts build log for my OC Mandalorian, Meshura Ordo.

Today I got my flight suit, a pair of coveralls I got off amazon (here: https://www.amazon.com/dp/B08DL7J5Q2)

I don't have my helmet yet, that's arriving later this month, so I covered my face with my Master Chief helmet instead.

unfortunately there was a slight quality control issue in the coveralls:

there's a hole where a seam didn't get sewn properly. I can fix this pretty easily though so I'm not too worried.
 
and that's all for today but Ill have more later, probably at the next Razorcrest clan armor party!

That's not a hole in the seam. I mean, literally, it is a "hole in the seam", but that is actually a slit pocket. This allows you to access the pocket of whatever pants/shorts you may be wearing underneath the coveralls without completely unzipping the suit. I lost access to my slit pockets because I had to get my coveralls taken in from a 44" waist to a 34" waist, so the seam was resewn without the slit, but I plan to take the other external hip pocket, cut out the liner, and close it with velcro so I can still access, for example, my wallet in my shorts pockets underneath the flightsuit.

It might be convenient for attending an event, and I see a booth with something I REALLY want to buy and just can't wait to get out of my kit to buy it XD.

I think the basic gist with pockets is, if it is a patch of cloth sewn onto the outside of the main body of fabric (think butt pockets on jeans), then you need to remove the pocket. If it is a side pocket where the opening is aligned with a seam, but otherwise you don't see any external pieces of the pocket's construction, it is safe to leave it without obliterating all signs of its existence; just make sure it stays closed, with velcro. OR you can sew it closed.

Also, if a pocket is completely covered by some part of your kit (e.g., a kama that completely covers your butt pockets, or a flak vest that completely covers your chest pockets), let the covering piece of kit do its job and forget about the pockets.

Yeah, no problem.
For future reference, one way to tell if it was a mistake or not could be to refer to the original posting and see what pockets were advertised. Read descriptions carefully when you buy things for cosplay; you can learn all sorts of info about materials, closures, and features of things before you even buy them. Also, that slit pocket was pretty cleanly sewn; if it was a mistake, the under layer probably would have had a ragged unhemmed edge, but as it was, I believe it was sewn to the inside of the flightsuit somehow.
