First off, this is a Rubies 1pc Jango, which is teensy. I'm 5'6" and wear a 7 1/4 hat, and smooshing my head into one of those buckets is just not comfortable at all; we're talking nose squished against the visor and head right against the back of the helmet.

On top of that, turning a Jango into a crusader-era bucket would take a shab-load of work. You're much better off scratch-building. There are a couple tutorials on here for scratch-building a standard mando bucket, which you could use as a loose guide to turn out a crusader bucket.

That said, you could grab a premade helmet and modify it, but if you were to go that route, I'd suggest a rubies 2pc Jango instead of the 'collector's edition', if only because the 2pc is $30 cheaper and easier to cut up and mod.

No prob :). Just looking to save you trouble in the long run. Those buckets are pretty much only good (fit-wise) for kids and folk with tiny heads, but still not cost-effective. If you haven't yet, definitely post up WIPs of the scratchbuilds. Could be a good resource for others trying to do so as well.
