 Kane to answer your question:  The way i understand it The mandalorian Knights are rogue Jedi that joined the Mando'ade during the time of the Mandalorian wars..... or something like that. They ARE mando's, they DO use Lightsabers, and what's worse they ARE a valid and approved part of the EU.

 Like someone said earlier, it's almost like they decided to give us our own personal Jar-Jar. An embarrassment that jsut doesnt make any sense, but that if we are to remain true to canon have to grudgingly acknowledge.

  It does bring up a decent point though and i don't think I've heard it seriously discussed, if someone is honestly wanting to make one for approval would the App Team allow it? It does meet the letter of the CRL's,  but kind of mocks their spirit.

Mostly it's just that a Jedi Mandalorian is boring and a cop-out. 'I have laz0r-proof armor and the best tactical training and a lightsaber and space magic that makes me invincible!' It's like a 10year old's idea of the coolest thing evar. It's like using cheat codes in a game. Sure it's fun for a while, but you lose interest REALLY fast. You've gotta have some flaws to keep characters interesting and relatable.

No one has a problem with Jedi by themselves. It's when their stuff gets mixed with our stuff that it becomes an issue.
