These plates look to be on the large side to me. You want to make sure that they're not hanging off of your sides or wrapping around too much!

just trim 1/4-1/2 inch off the edges, no need to start again.
If you look at the do's and don't you'll see your not far off

Are you sure this is the right picture?
I ask as it doesn't seem you've trimmed them only shaped them a bit?

Hmmm, maybe its the lighting then making them look larger somehow casting shadows etc, or just a bit more shaping needed, are you doing them solo or do you have a friend available,  Large or medium should be fine, could you bring up the collar to your throat and space from there as thats where it should be, if already doing that you need to take pictures in day light or well lit room as its deceptive

its hard to tell as you are disappearing into the background a bit  ???

but it is looking better. the plates are a bit wonky, placement and off centre.

when putting them on fist get the collar on centred and straight and then work down from there ;)

It's a might bit crooked.  It might behoove you to have someone else place your plates for a test fitting, so we can better judge the size and placement.

Crooked, but looking to be the right size. Though the cut of the collar is bugging me, it could just be the position, but it seems to throw the whole thing off.

Angling of the chest plates needs to be brought in towards the bottom by a degree or so, then brought up by a hair.
